Rustle these fairy cakes up in less than 20 minutes for the kids or your mum-chums.
125g self-raising flour
125g unsalted butter, very soft (not melting)
125g caster sugar
2 eggs
1 teaspoon good vanilla extract (not essence)
Juice of 1 lemon
Grated rind of 1 lemon
1 teaspoon baking powder
Pinch of salt
Few tablespoons of milk
If you want to ice – Icing powder & food colouring.
Method
Preheat oven to 200 C
Line a 12 muffin tray with cupcake papers
Pop all the ingredients except milk in a processor and blitz. Add the milk to get a smooth flowing batter.
Using 2 spoons divide mixture into cases.
Pop in the oven for 15-20 minutes.
Leave to cool.
To ice, just mix icing powder with water as per instructions on the packet, add a drop of food colouring if you like.
